The Estate

Domaine Michel Caillot was founded in Meursault in 1961 by Roger Caillot. Michel began working in the vineyards in the late 1980s and took responsibility for élevage in the mid-1990s. The family estate now spans about 13 hectares from Santenay to Beaune, with white-wine holdings centered on Meursault and additional parcels in Puligny-Montrachet and Bâtard-Montrachet, while the reds come from sites including Pommard, Volnay, Beaune and Monthélie.

Vineyard

The domaine works roughly seven hectares of white varieties and six hectares of red, with vines ranging from about 25 to 70 years old. Michel uses low-yield viticulture, including pruning and green harvesting, and farms organically without certification. The estate's soils include the Jurassic marls and marly limestones that shape the Côte de Beaune.

Organic farming practices; not certified organic. Low yields are maintained through pruning and green harvesting.

Cellar & People

Caillot is known for unusually patient élevage. Fermentations proceed slowly in a very cold cellar with native yeasts, and the three-level winery allows wine to move by gravity. Whites spend extended time on their lees, beginning in barrel before moving to tank with the lees for additional aging; they are fined but not filtered, while bottling is done by hand. The result is a deliberate style built around texture, freshness and long development rather than early release.
